Orange Cake
Preparation time: 35 minutes
Baking time: 30 minutes
Serves 6
A little care needed
You will need:
4 eggs, separated
230g / 1 1/2 cups all-purpose flour
250g / 1 cup (lightly more) granulated sugar
3 1/2 teaspoons baking soda
4 oranges Navel (juices+grated orange rinds)
160g / 10 tablespoons melted butter
Butter to grease the tin
1.Heat the oven to 350°F.
Generously grease a 9-inch round cake pan with butter.
2. Make the cake:
In
a large bowl, whisk together the egg yolks, sugar and grated orange
rinds; whisk until smooth; whisk in the orange juices, melted butter,
baking soda, and flour. Whisk until smooth and blended.
3. In a large bowl, beat the egg whites with an electric mixer until stiff peaks form.
Gradually
stir in the precedent mixture, stir until blended. Pour into the cake
pan. Bake until a cake tester inserted near the center comes out clean,
30 minutes. Run a knife around the cake sides to loosen it from the
sides of the pan.
Place the cake on a service plate.

Chocolate Cake
Preparation time: 30 minutes
Baking time: 50 minutes
Serves 6
A little care needed:
You will need:
90g / 2/3 cup all-purpose flour
140g / 5 oz baking chocolate
140g / 2/3 cup granulated sugar
70g / 3 tablespoons butter
4 eggs, separated
1. Heat the oven to 300°F.
Grease a 9-inch round cake pan with butter.
2. Make the cake:
In
a small saucepan, break the chocolate up, melt it with butter over low
heat. Beat 4 egg yolks, one at a time, stir in the melted chocolate,
whisk until smooth, stir in sugar and flour.
In a large mixer bowl, beat the egg whites with an electric mixer until stiff peaks form when the beaters are lifted.
Gradually add them to the preparation, with a rubber spatula, gently stir until no white streaks remain.
Pour the batter into the greased cake pan. Reduce the oven temperature to 250°F and bake for 50 minutes.
3. Set the pan on a wire rack to cool for 1 hour.
Very carefully remove the cake from the pan, place the cake on a serving plate. Serve at room temperature.

Le poulet provençal
(browned chicken provençal mode, stoved season's vegetables)
Preparation time: 15 minutes (vegetables)
Cooking time: 30 minutes (vegetables), 25 minutes (chicken)

You will need:
4 boneless, skinless chicken breast halves
1 yellow bell pepper, 1 green bell pepper, 1 red bell pepper cut into 1-inch pieces
12 onions pearls, peeled
1,5 kg / 3 pounds red-skinned potatoes, peeled, sliced thin
1 tomatoe cut in wedges
2 medium-size yellow onions, sliced
Salt, pepper, 1 tablespoon dried basil leaves
1/2 tablespoon dried bay leaves powder
1/2 tablespoon dried rosemary powder
6 tablespoons olive oil
1 glass of water (or 1/2 if the glass is big)
1.
In a large skillet, heat 3 tbsp olive oil over medium-high heat. Add
the potatoes, bell peppers, onions, salt and pepper. Sprinkle with half
of dried herbs; stir constantly until vegetables are tender.
2.
Grease a Dutch oven with 3 tbsp olive oil, add the chicken breasts, and
onion pearls. Cook over medium-high heat first stirring constantly,
then reduce the heat to low-medium.
As the chicken is golden
brown, reduce the heat to low. Add the glass of water and the tomatoe
wedges. Sprinkle with herbs over chicken; add salt and pepper. Simmer
covered for 15-20 minutes.

Tomatoe Surprise
Preparation time: 15 minutes
Serves 4
Easy
You will need:
4 tomatoes, rinsed, drained
1 fennel, peeled and chopped
2 cans light tuna (drained) 148g / 5,2 oz
3 small avocados
150g / 1/2 cup mayonnaise
1 teaspoon curry powder
Salt, pepper
1. Remove the top of the tomatoes.
Carefully clean out the tomatoes with a teaspoon.
2. In a medium-size bowl, mix the tuna, mayonnaise, chopped fennel, curry, salt and pepper.
3. Spoon the mixture into tomatoes.
Close
up the tomatoes. Decorate with avocado strips (do not forget to cut
avocado strips to the last moment because they are getting black very
quickly !). Serve right away.
Serve cold or at room temperature.

Cheese Tart
Preparation time: 10 minutes
Baking time: 25 minutes
Serves 4
Easy
You will need:
1 ready-made refrigerated pie-crust
200g / 7,5 oz shredded mild Swiss cheese
4 tablespoons crème fraîche / Sour cream
2 eggs
1/2 tablespoon all- purpose flour
Salt, pepper, 2 teaspoons grated nutmeg, 1 teaspoon garlic powder
Butter (to grease the tart pan)
1. Heat the oven to 350°F,
Grease a 9-inch tart pan with butter.
Line the pan with the pie crust.
2. Make the filling:
In
a large bowl, whisk together the eggs, sour cream, flour, garlic
powder, and grated-nutmeg, whisk until smooth, then add salt and pepper.
Gradually add shredded mild Swiss cheese, whisk until blended.
Pour the filling into the pie crust. Bake for 25 minutes to 350°F.
Serve warm or at room temperature.
